Hanan Sofer stepped into the world of cheeses entirely by accident when coming upon a recipe for Tzfat Cheese. He began making cheeses in his home, then studied the art of cheese making in France and Italy, and eventually established Hanan Hagaban’s Fromagerie in the middle of an avocado plantation in Moshav Herut.
Hanan and his partner, Hadar, renovated an old chicken house on the moshav, originally built by Hadar’s grandfather, for the fromagerie. It was important for them to preserve the past while pouring new life into the structure – much like the spirit of the construction of the State of Israel.
